Try-It Tuesday: One Pan Garlic Ranch Chicken and Veggies


Oh my goodness... It's almost been two months since I've blogged. I'd give you some good excuses of how busy I've been... but I don't think you really care. So I'll get right to the good stuff.

I made a delicious recipe tonight (or last night... it's currently 4:00am... and I can't sleep...) and I want to share it with you all. It's got all the components of an Abby favorite: 1. chicken breast (it actually called for chicken thighs, but bone and skin scare me), 2. cooked carrots (I love cooked carrots), 3. super easy prep, 4. super easy ingredients, 5. ready in less than an hour, 6. relatively healthy (if you can ignore the brown sugar you rub all over the chicken) 7. I feel funny ending the list at 6 things but that's pretty much all I've got so I'm ending with 7 instead.

I made a few alterations on this one. Like mentioned above I opted for chicken breast instead of chicken thigh because it's healthier and I don't do bone and skin on my meat. I also had to cook it longer than it said by about 5 or 10 minutes (and could have cooked it longer to get my carrots a little softer.) Overall, the recipe was a hit. My roommate Becky ate it too and was a fan. I'd highly recommend it... (Two final things: 1. I don't know why there is garlic in the title because I didn't actually use any...? 2. Don't be offended by the name of the blog where I got this recipe :) it's got some good stuff.)
