Try-It (Day Before) Tuesday: Jamaican Jerk Tacos.

It's been a while since I've made a meal. I moved to a new place last weekend (by the way, I moved to a new place last weekend) and this was the first big meal I've made. It's funny how weird it feels cooking in a new kitchen. But I've faced my fear and conquered my first meal and made these tacos...

Jamaican Jerk Chicken Tacos with Grilled Pineapple Mango Salsa, to be exact. The recipe was super easy - I just covered the chicken in jerk seasoning (that I bought from my new favorite spice shop, Penzey's) and then whipped up the salsa. If you made the salsa ahead of time you could probably have this meal ready in less than 15 minutes - not bad, eh? I had my boyfriend Josh and roommate Becky for dinner and we all approved.

I think I'm going to have to add this one to my rotation of recipes. You should probably try it out too...

(My pic isn't quite as appetizing as theirs... Maybe some day.)

New York!

"Do you guys want to go to New York?" I got this group text from my friend King about a month and a half ago. "Let's do it!" "Riiiight..." "King, are you being serious?" were a few of the responses. "Yeah, how about the weekend of May 25th?" "Seriously?!" And so it began... the planning of a spontaneous trip to New York with 5 of my best friends (and 2 of their kids). We went a few weekends ago and it was the trip of a lifetime.

Pretty sure this is about the time I said, "Guys, can you believe we're in New York?!"

Resting on the lawn of Bryant Park after an afternoon of walking the city.

 First time seeing the Guggenheim.

My dates for the weekend. Ryland's got quite the intense look in his eyes.

We stayed in an apartment in Queens via Airbnb and I loved it!

Sharing ice cream at the Mets game.

I'm pretty partial to Kansas City's Union Station but Grand Central Station has one beautiful ceiling...

Walking Highline Park - one of my favorite nights while in New York.

First time in Little Italy. We ate Malaysian food there... Logical, I know.

Guys on the ferry.

Girls (and Ryland) on the ferry.

Pretty fantastic going on a trip with this guy.

First time walking the Brooklyn Bridge.

My best friends. What a great trip...
